fennel seed

Fennel seed powder is produced from the seeds of sweet fennel, also known as finocchio, is widely used throughout the Mediterranean as a seasoning for stews, roasted meats and vegetables. It is a staple in Indian cuisine, often in combination with cardamom, cumin and ginger.

The licorice or anise-like flavor and fragrance of fennel seed is due to the presence of the compounds fenchone and anethole, which provide the bitter and sweet taste components, respectively. These agents are also responsible for the carminative qualities of the herb.
