[ Recipe: Lavender and Vanilla Syrup ] ~ from Monterey Bay Herb Co
lavender and vanilla syrup

Swirl a few tablespoons of this syrup with strong coffee, a dash of milk and some ice in a blender and you've got an herbal latte that can't be beat.

1 ½ cups sugar
4 cups water
1 vanilla bean, split lengthwise
2 teaspoons vanilla extract
¼ cup dried lavender flowers

  1. Heat the sugar, water and vanilla bean in a saucepan; boil gently for 5 minutes.
  2. Remove and discard the vanilla bean. Stir in the vanilla extract and lavender flowers and heat 1 minute more.
  3. Remove from heat. Cool and strain the syrup. Store in a glass container with a tight-fitting lid.
