goji, apple, and walnut salad
This salad is perfect for lunch or for a light supper. It tastes
great made with mixed greens and herbs, but the peppery flavor
of arugula sets the stage for the other ingredients. Variation:
Use Asian pear slices instead of apple.
4 cups salad greens
2 Granny Smith apples, sliced
3 tablespoons goji berries
2 tablespoons chopped walnuts
2 tablespoons roasted sunflower seeds
Combine all ingredients in a bottle with a tight-fitting lid and
shake well (or whisk in a bowl) just before using. Refrigerate
leftovers.
