The aroma from these classic cinnamon cookies is so well-loved that you can buy candles and wax tarts in this scent. We love the chewy goodness of the cookies too!

3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
½ teaspoon salt
1 cup unsalted butter, softened
½ cup light brown sugar
1 ¼ cups granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 teaspoons ground cinnamon

1. Preheat oven to 375 degrees Fahrenheit and line two baking sheets with parchment paper.
2. Combine the flour, baking soda, cream of tartar and salt in a medium bowl; set aside.
3. Cream together the butter, brown sugar and 1 cup of the granulated sugar until light and fluffy. Beat in the eggs and vanilla.
4. Gradually add the flour mixture to the butter and sugar mixture, stirring just until incorporated.
5. In a shallow bowl, combine the cinnamon and the remaining ¼ cup of granulated sugar; set aside.
6. Take a level tablespoon of dough at a time and shape into balls. Roll the dough balls in the cinnamon sugar mixture and place on prepared baking sheets, spacing them 2 inches apart.
7. Bake for 2 to 14 minutes, or until edges are just lightly browned. Cool slightly, then transfer to wire racks to cool completely.
