As you might have guessed, Hungary is the largest producer of Hungarian paprika. In fact, it’s the national spice of the country. In addition to being a key ingredient in Hungarian goulash, paprika is also commonly added to marinades, condiments tomato sauces and lentil stews.

There are eight grades of Hungarian paprika. The most colorful grade is referred to as különleges, while édesnemes is characterized as sweet and pungent and eros is classified as the hottest despite a muted color. For the most part, Hungarian paprika distributed in the U.S. is of the édesnemes variety.
