Bromelain is an enzyme from the pineapple fruit. Bromelain powder is easily encapsulated as a dietary supplement, or it can be added to smoothies and fruit drinks. When added to marinades or sprinkled directly on meat, bromelain degrades protein and collagen, which tenderizes the food. In fact, because this enzyme is present in all parts of the plant, including the fruit, this explains why pineapple cannot be used to make gelatin.

safetyDespite being a digestive enzyme, bromelain powder can cause stomach upset and nausea in some people. This substance also produces an antiplatelet effect and increases the risk of bleeding if taken with blood-thinning medications. Do not use bromelain at least 2 weeks before and after surgery. Bromelain should not be used by people with a known allergy to latex, wheat, grass pollen, carrots, celery or fennel.
