4 cups shredded carrots ¼ cup raisins Juice of one lemon 2 garlic cloves, minced ½ teaspoon ground cumin ¼ teaspoon ground cinnamon ⅛ teaspoon ground cayenne pepper 2 tablespoons extra virgin olive oil ¼ cup walnuts, chopped Salt and freshly ground black pepper, to taste
In a large bowl, whisk together lemon juice, garlic, cumin, cinnamon, cayenne, salt and pepper. Slowly add olive oil while continuing to whisk. Add carrots and walnuts; mix to combine.
