This traditional Spanish cold soup is as refreshing as it is nourishing. It’s like summer in a bowl!

4 cups tomato juice
1 yellow onion, chopped
1 green bell pepper, chopped
1 seedless English cucumber, chopped
2 cups tomatoes, chopped
2 green onions, chopped
1 clove garlic, minced
3 tablespoons fresh lemon juice
2 tablespoons red wine vinegar
1 teaspoon dried tarragon
1 teaspoon dried basil
1/4 cup chopped fresh parsley
1 teaspoon white sugar
Salt and pepper to taste

Combine all ingredients in a food processor and pulse until everything is incorporated but the mixture still has some chunkiness to it. Place in the refrigerator to chill for 2 hours before serving.
