Grain-Free Nopal Tortillas

Ingredients

  • 1 cup of almond flour
  • 1/2 cup of tapioca flour
  • 1 tablespoon of organic nopal powder
  • 1/2 cup of warm water
  • 1/2 teaspoon of sea salt

Instructions

  1. Whisk the almond flour, tapioca flour, organic nopal powder, and sea salt together in a mixing bowl.
  2. Gradually stir in the warm water until the mixture forms a soft dough.
  3. Divide the dough into small, evenly sized balls.
  4. Place each dough ball between two sheets of parchment paper and flatten using a tortilla press or a rolling pin.
  5. Heat a nonstick skillet or griddle over medium heat.
  6. Cook each tortilla for 1 to 2 minutes per side until lightly browned and cooked through.
  7. Keep the cooked tortillas covered with a clean kitchen towel to keep them warm and pliable before serving.
