Roasted carob powder is obtained from the “beans” of Ceratonia siliqua, an evergreen tree in the legume family native to the Mediterranean region. Also known as St. john's bread, the tree produces flat brown pods with bean-like seeds and a pulp that tastes like chocolate.
Aside from the pleasing flavor, roasted carob powder contains several naturally occurring active compounds. It’s a great caffeine-free alternative to chocolate. It’s also free of tyramine, a compound in chocolate known to trigger headaches in some people.
