Spiced Pumpkin Vodka Recipe

Spicy and warm, this vodka will become a seasonal favorite. Makes a great gift too.

2 cups sugar pumpkin peeled and cut into small chunks
3 cups unflavored vodka
1 whole cinnamon stick)
2 star anise)
2 whole vanilla beans)
3 large pieces candied ginger cut into chunks

Preheat the oven to 350° Fahrenheit. Place the pumpkin on a foil-lined baking sheet lightly coated with cooking spray and bake 20-30 minutes, or until fork tender. Remove from oven and set aside to cool. Pour the vodka into a large mason jar. Add the roasted pumpkin, cinnamon, star anise, vanilla beans and candied ginger and secure the lid. Let the mixture infuse for one week, gently shaking the bottle once a day. Strain and discard the pumpkin and spices, pouring the reserved liquid into decorative bottles.
