Cinnamon-Apple Cider Muffins


Makes 18 muffins

1 cup unsalted butter
1-1/4 cups sugar
3 eggs
4 cups all-purpose flour
1-1/2 tablespoons baking powder
1-1/2 teaspoons salt
2-1/2 teaspoons cinnamon
2 cups apple cider
2 cups apples, peeled and chopped

Topping:

2 tablespoons packed light brown sugar
4 teaspoons flour
1/2 teaspoon ground cinnamon
1 tablespoon butter, cut into small pieces



Preheat oven to 375°F. Grease and lightly flour 2 12-cup muffin pans (or use muffin liners, if you wish).

Cream the butter and sugar in a large mixing bowl. Add eggs and mix well.

Combine the flour, baking powder, salt, and cinnamon. Add flour mixture a little at a time to the butter and egg mixture, blending well each time. Add the apple cider and chopped apples, stirring until combined.

Divide the batter evenly among the muffin cups.

To make the topping, combine the brown sugar, flour and cinnamon in a small bowl. Cut in the butter with your fingers (or pulse in a food processor) just until the mixture forms course crumbs. Sprinkle the topping over the muffins.

Bake muffins for 30-40 minutes, or until a toothpick inserted in center comes out clean.
