[ Recipe: Homemade Ginger Ale ]

Perfect for children and for mixing adult beverages, this classic beverage is so simple to make you’ll wonder why you ever purchased it from a store. The flavor is much nicer too – clean, mellow and smooth.

1 cup crystalized ginger
4 cups filtered water
1 ¼ cups turbinado sugar

Combine the ginger and water in a large saucepan or Dutch oven and bring to a boil. Reduce heat to the lowest setting, cover, and let the mixture simmer, stirring occasionally, 30 minutes. Remove from heat and stir in the sugar. Replace the cover and let the concentrate stand for 2 hours. Strain through cheesecloth or a mesh strainer, reserving the syrupy liquid in a clean, glass jar. Store in the refrigerator and use within three months. To use, mix 1 part ginger concentrate with 5 parts sparkling water, adjusting as necessary for taste. Refrigerate any leftover beverage for another day. Tip: Add a sprig of fresh rosemary, a few juniper berries, or fresh mint leaves with the ginger for unique flavor.
