baked eggs with spinach and feta

Easy to make and a breeze to clean up, this recipe gets an elegant breakfast on the bed tray in minutes. Consider adding cooked and crumbled bacon and/or sliced, cooked potato to the recipe for heartier fare.

Olive oil
4 large eggs
1 cup spinach, chopped
2 tablespoons heavy cream
1/2 cup crumbled feta cheese
2 shallots, thinly sliced
Salt & freshly ground black pepper
2 Ramekins or baking dishes to hold two eggs

Preheat the oven to 390° F.

Lightly grease 2 ramekins or other small baking dishes with oil. Distribute chopped spinach between dishes. Crack 2 egg (one at a time) into each dish.

Pour cream evenly among dishes. Sprinkle each dish with feta and shallots. Season with salt and pepper to taste.

Arrange dishes on a baking tray. Bake until eggs are set, about 10 minutes.
