The combination of strawberry and basil is classic among herb-themed Popsicle recipes. Here, the inclusion of honey instead of sugar enhances sweetness without adding empty calories, while Greek yogurt provides a smooth, creamy texture. (Note: Most recipes call for a balsamic reduction, but you can achieve flavorful results with a good quality balsamic vinegar straight from the bottle.)

2 cups fresh strawberries, hulled and chopped
1/3 cup raw, local honey
1 teaspoon balsamic vinegar
1 cup Greek yogurt
8 to 10 fresh basil leaves

Mix the strawberries, honey and balsamic vinegar in a large bowl; set aside for 15 minutes. Fold the Greek yogurt and basil leaves into the strawberry mixture. Using an immersion blender (or working batches with a blender) process until smooth. Pour into molds and freeze until firm.
