The flavor in these pops is so bright you'll think you’re tasting frozen sunshine. These are bound to be a hit with the kids too, and they're so wholesome you won't have to put any restrictions on self-service.
1/2 cup filtered water 1/3 cup raw, local honey 1/4 cup crystalized ginger root, chopped 2 cups cantaloupe, cut into cubes
Combine the water, honey and crystalized ginger root in a small saucepan. Bring to the boil and cook into the mixture begins to thicken into a syrup, stirring often. Remove from heat and let cool for 5 minutes. Blend the infused syrup and cantaloupe together in a bowl with an immersion blender (or work in batches with a blender) until smooth. Pour into molds and freeze until firm.
