Spinach is a leafy, green vegetable in the amaranth family native to Southwest Asia. It is abundant in antioxidants, omega-3 fatty acids, vitamins A, B2, B6, C and K, and a long list of nutrients, including folate, iron, zinc, calcium, potassium, phosphorus, niacin and selenium. It is also fat and gluten-free.
