The artichoke is one of the world’s oldest foods and medicinal plants. The edible portion of the plant is the young bud of the plant’s flower, which is technically a thistle. This Mediterranean native is prized as a vegetable and the powdered leaf, rich in bioflavonoids, is taken as tea, encapsulated as a dietary supplement, or used in cosmetic preparations.
Artichoke leaf is also an excellent source of fiber and plant protein. The herb also provides folate, magnesium, potassium, phosphorus and vitamins B, C and K.
