Chickweed is a creeping annual and sometimes biennial flowering groundcover that is native to Europe. Although the plant is known by many common names like Adder's mouth, stitchwort, tongue grass and starweed, it is called common chickweed because it’s a favorite foraging plant for chickens.

The herb has a high saponin content, which gives foods and topical formulations a creamy texture. Stir powdered chickweed into soups, curries and sauces, or blend into smoothies for extra frothiness and added nutrition.


Background: Chickweed grows abundantly wherever the white man has traveled, and can be found world-wide in fields, landfills, roadbeds and gardens.  New leaf growth and seeds of the plant are a favorite of young chicks and birds, suggested by the name "Chickweed." 

Description: Chickweed is a ground-creeping biennial or annual weed with succulent opposing leaves measuring ½ inch in length. The white, star-shaped flowers bloom from early spring to late fall, and their petals close up in dark, inclement weather. The young leaves have the flavor of spinach and can be used in salads.
