Cinnamomum cassia is harvested from the dried bark of an evergreen tree that is native to China that is now cultivated in Thailand, India and Vietnam. Also known as Chinese cinnamon, this is the variety most commonly found in US supermarkets. Because the bark is thicker and has a slightly more bitter taste than other varieties, is also sometimes referred to as bastard cinnamon.
